I discovered cinnamon chips at a bulk store on my way through Toronto one year. They became as instant hit in my already favourite oatmeal cookies. Chocolate chips are good too, but they are so yesterday. I have a hard time finding cinnamon chips in Canada, but they can be found online especially around Christmas. My most recent Cinnamon chips were sent by a very good friend from Florida. He is the greatest! My secret for great cookies is a stiff dough, put in the fridge to make it cold before baking.
Ingredients
- 1 cup softened butter
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tbsp vanilla
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 cups quick cooking oatmeal
- 2 cups of cinnamon chips
- 1 cup nuts or raisins, optional
Instructions
- Heat the oven to 375F.
- In a large bowl, beat butter, brown sugar and white sugar until it is fluffy and changes to a lighter colour (about 10 Minutes).
- Beat in vanilla and eggs well, scraping downtime sides of the bowl.
- Sprinkle baking soda, salt and cinnamon evenly over the surface and then blend in.
- Gradually blend in four and the oatmeal.
- Stir in cinnamon chips and nut, if using, by hand.
- Drop tablespoons of dough onto an uncreased cookie sheet.
- Bake 9 to 10 minutes until browning at the edges.
- Remove from the oven and rest for 1 minute. Transfer to a rack to finish cooling.
