After a great day of DIY, I was craving chips and dip, but wanted something a bit healthy. I had an avocado on the counter and decided to start with that. Everything else had to come from the fridge, without being all fat. I came up with this great dip. Perfect with chips or vegetables., this dip has a strong flavour, and so a little goes a long way.
Ingredients
- 1 large avocado, peeled and pitted
- 2/3 cup parmesan petals
- 1 tsp dried cilantro
- 2 tsp lemon or lime juice
- 2 tbsp minced red onion
Instructions
- Blend the avocado in the blender until it is chunky.
- Add the parmesan, cilantro and lemon juice. Blend until smooth.
- Transfer the dip to a bowl and stir in red onion.
- Serve with chopped vegetables or chips.
- Enjoy!
