Dumplings

This is a recipe I developed when my kids were young and not fond of vegetables. The onion and celery (of which there is a lot of) disintegrate into the broth so all that is detected is flavor. I mash the potatoes and carrots with a fork once on the kids plate. Freezes well. In fact, I usually make a double batch, and freeze some the same day. -Betty
Ingredients
- 2 cups flour
- 4 tsp baking powder
- 1/2 tsp salt
- 2 tbsp butter
- 1 1/3 cup milk
Instructions
- Mix flour, baking powder and salt together in a medium bowl.
- Cut in butter until crumbly.
- Mix in milk to make a dough.
- Drop spoonfuls onto boiling stew and simmer for 15 to 20 minutes. Weight down the lid to keep it in place.
