Many people will avoid eggs benedict at home because it is fiddly. I am fussy about my eggs, but enjoy eggs benedict. I decided that home style eggs benedict had to be made with ready ingredients. Quickly the english muffin was replaced with a slice of toast, hearty and thick if I had it and I now keep a good supply of ready mix hollandaise sauce on hand. Hollandaise mix can be made ahead and kept in the fridge for about a week.
Ingredients
- 1 or 2 eggs
- 1 piece of bread
- 2 or 3 tbsp of Hollandaise sauce made from a mix. I use McCormick.
- slice of ham, bacon, tomato and spinach (all optional or none at all)
- sprinkle of paprika
Instructions
- Make the hollandaise according to the package instructions. I use considerably less butter than they suggest.
- Spray a small cooking pot with cooking spray and then gently fill with water. Bring the water to a boil.
- Crack the egg(s) gently into the water and lower the temperature to about 3 on the dial of your stove.
- Immediately put the bread into the toaster to cook.
- Meanwhile, gently heat the ham(or optional ingredients) in the microwave for 10 seconds.
- Prepare a paper towel or cloth to put the eggs on to dry.
- The eggs are ready when the toast pops up. Remove the egg(s) to the paper towel with a slotted spoon. Gently pat to dry.
- Place the toast on the plate and spread with 2 tsp Hollandaise sauce. Add the ham and then the egg(s). Pour the remaining 2 tbsp hollandaise sauce over the eggs. Sprinkle with paprika.
