Spinach salad has become standard in our house since my son Jacob introduced us to it about 10 years ago. For me, it has become a simple formula that allows me to create an awesome salad whenever I have baby spinach leaves.
Ingredients
- 6 cups of baby spinach leaves, whole or torn
- 1/2 cup mushrooms, sliced, or any other chunky vegetable
- 1/2 cup craisins, or 1 cup sliced strawberries, blueberries or other fruit
- 1/4 cup diced blue cheese, or any cheese
- 1/4 cup cashews, or other nuts or seeds (pumpkin seeds are another favourite)
- 1/4 cup bacon bits, optional
- 1/4 cup green onion, optional
- 3 tbsp olive oil
- 2 tbsp cider vinegar
- salt and pepper to taste
Instructions
- In a large salad bowl, layer spinach, fruit, cheese, nuts, bacon and onion.
- In a small bowl whisk together olive oil, vinegar and salt and pepper (1/3 cup of Italian dressing can be substituted here).
- Add dressing to the spinach mixture and toss well.
- Serve.
- Get creative with the various ingredients using what you have and what you like.
- Enjoy.
