Dan loves sweet potatoes and tries to sneak them into everything. He added one to the mashed potatoes and was a huge hit at the dinner party. So here is an award winning twist on mashed potatoes.
Ingredients
- 5 medium russet potatoes, peeled
- 1 small orange sweet potato, peeled
- 1/2 cup milk
- 1/4 cup finely chopped green onion
- salt to taste (1 tsp)
- freshly ground pepper to taste
Instructions
- Chop the potatoes and sweet potato into 1 inch cubes.
- Rinse with cold water. Put into a large pot and cover with cold water.
- Add one tsp of salt to the water.
- Bring to a boil and continue to cook for 20 minutes until tender with a fork.
- Drain the water (which can be saved for gravy), and return potatoes to the pan.
- Mash with a hand masher until coarse, then bring in the hand blender. Add milk, salt and pepper and blend until smooth. Add onion and stir.
